Public policy letter

An individual letter wrote by me to my district Assemblymember regarding an assembly bill about nutrition status on school kids. I stated my opinion about the issue and the reasons behind it.

Cycle Menu Project

A project focusing on menu planning for a university dining hall. I created a 5-day cycle menu, front-of-the-house menu, back-of-the-house menu, and a house non-selective menu. I also conducted a nutrient analysis for a potential customer to make sure the foods served from my menu provide adequate nutrients.

 

Recipe Standardization and enlargement

A project in which I enlarged a 6-serving recipe into a 150-serving recipe and standardized the recipe into a format used in the kitchen

 

Recipe Costing

A project focusing on the calculation of food cost, total cost, recipe cost and selling price regarding to the different ingredients used, recipe quantity and as purchased cost per unit.

 

Budget Justification

A project regarding on the process of writing a capital budget equipment justification while considering lifetime energy costs by interpreting energy and financial data. ​
