A project focusing on menu planning for a university dining hall. I created a 5-day cycle menu, front-of-the-house menu, back-of-the-house menu, and a house non-selective menu. I also conducted a nutrient analysis for a potential customer to make sure the foods served from my menu provide adequate nutrients.
Recipe Standardization and enlargement
A project in which I enlarged a 6-serving recipe into a 150-serving recipe and standardized the recipe into a format used in the kitchen
A project focusing on the calculation of food cost, total cost, recipe cost and selling price regarding to the different ingredients used, recipe quantity and as purchased cost per unit.
A project regarding on the process of writing a capital budget equipment justification while considering lifetime energy costs by interpreting energy and financial data.
